An afternoon with Cheese and Wine

Although I am Vegan, the rest of my family and friends are not which means I often find myself trying to create something for everyone. This means I'm a big fan of platters!
If like me, you are catering for a variety of needs, you might want to create 3 platters:
Vegan platter:
There are so many artisan Vegan cheeses available to either purchase or make yourself that it is really straight forward to create a vegan cheese platter, be sure to complement with vegan crackers and breads (You'd be surprised by how many are not!) humous, dips, olives, grapes and fruit a plenty. 
This is such a colourful and simple to create vegan cheese board but it looks super impressive. Keeping grapes on their vines, strawberries whole and figs simply halved, cherries whole and red currents bunched makes prep simple. Scatter with some blueberries and rocket leaves, loose olives a whole carrot or two and a few squares of vegan dark chocolate and you are all set. 
I'm a big fan of the Happy Pear's beetroot hummus (you can buy it ready made in Waitrose now) and I love making my own hummus at home and drizzling with cold pressed olive oil.

Vegetarian Platter:
Make sure you have a good mix of soft and hard cheeses such as mature cheddar teamed with a creamy whole brie to keep things interesting. - be sure to check your cheeses are made with vegetarian rennet. Using a chilled slate board is a great way to regulate the temperature of the cheese whilst keeping the snap in your celery.

Freeze your grapes before you add them to a cheese board. It’ll make them extra crunchy and will help keep your cheese cool!
Carnivorous Platter:
Create an antipasto selection platter of Parma ham, Milano and Napoli salami – just add crusty bread and chutney and place everything on boards and position away from the veggie/vegan platters so guests can serve themselves. (reserve judgement for a later date or after more wine)

Open a bottle of full-bodied vegan red or rosè prosecco and you’re all set for a sunny afternoon feast.
